  • 4 medium potatoes (diced)

  • 6 cups chicken broth
  • 1 bunch kale (chopped)
  • 1 cup heavy cream (or half-and-half)
  • Olive oil
  • Salt (to taste)
  • Pepper (to taste)
  • 1 teaspoon red pepper flakes (optional)

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add the chicken sausage, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes.
  2. Add the diced onion and sauté for 3-4 minutes until softened. Stir in minced garlic and cook for an additional minute.
  3. Incorporate the diced potatoes and pour in the chicken broth. Bring to a boil, then reduce heat and simmer for about 15 minutes until potatoes are tender.
  4. Add chopped kale and red pepper flakes (if using). Stir well and cook for another 5 minutes.
  5. Lower the heat and stir in the heavy cream. Season with salt and pepper to taste, warming through for an additional 2-3 minutes.
  6. Serve hot with crusty bread if desired.
