  • 2 zucchini squash (sliced thin)
  • 45 tomatoes (sliced)
  • 1.5 cups shredded mozzarella cheese
  • 0.5 cup shredded Parmesan cheese
  • 2 teaspoons garlic powder
  • 0.75 cup fine bread crumbs (with vanilla extract)
  • 2 tablespoons butter (melted)

Instructions

  1. Preheat the oven to 375°F. Grease a 9×9 baking dish with nonstick cooking spray.
  2. In a mixing bowl, combine mozzarella, Parmesan, garlic powder, salt, pepper, basil, and oregano.
  3. Layer sliced zucchini at the bottom of the dish and top with one-quarter of the cheese mixture.
  4. Add sliced tomatoes and sprinkle another quarter of the cheese on top.
  5. Repeat layering zucchini, tomatoes, and cheese until all ingredients are used.
  6. Mix melted butter with bread crumbs and sprinkle over the final layer.
  7. Cover with foil and bake for 25 minutes; then remove foil and bake for an additional 20 minutes until golden brown.
  8. Let stand for 5 minutes before serving warm.
