  • 4 medium Zucchini
  • 2 Eggs
  • 1/4 cup Parmesan Cheese (grated)
  • 1/2 teaspoon Black Pepper
  • 1/2 teaspoon Onion Powder
  • 1 Tablespoon Italian Seasoning (divided)
  • 1 Bell Pepper (chopped)
  • 1 Yellow Onion (chopped)
  • 4 cloves Garlic (minced)
  • 1 Tablespoon Olive Oil
  • 1 lb. Ground Turkey
  • 2 cups Marinara Sauce
  • 2 cups Mozzarella Cheese (shredded)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Grate the zucchini and drain excess moisture using a colander.
  3. In a mixing bowl, combine drained zucchini with eggs, Parmesan cheese, black pepper, onion powder, and Italian seasoning.
  4. Press the mixture into a greased 9×13 baking pan and bake for 20 minutes.
  5. While crust bakes, sauté onions and bell peppers in olive oil in a large skillet until soft. Add garlic and ground turkey; cook until browned. Stir in marinara sauce and remaining Italian seasoning.
  6. Spread the turkey mixture over the baked crust, top with mozzarella cheese, and bake for another 20 minutes until bubbly.
