  • 2 cups shredded zucchini (squeezed)
  • 1 cup Panko bread crumbs
  • 2 eggs
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup shredded Mozzarella cheese
  • 2 garlic cloves (minced)
  • Salt and black pepper to taste
  • Canola oil (for frying)

Instructions

  1. Grate zucchini using a box grater and squeeze out excess moisture with a mesh bag or cheese cloth.
  2. In a mixing bowl, combine squeezed zucchini, Panko bread crumbs, eggs, Parmesan cheese, Mozzarella cheese, minced garlic, salt, and pepper. Mix well.
  3. Preheat a cooking pan over medium heat with canola oil.
  4. Using an ice cream scoop, portion out the mixture into the pan and shape into fritters.
  5. Cook for about 4-6 minutes per side until golden brown. Flip only once to prevent breaking.
