  • ½ cup unsweetened cocoa powder
  • 1 ½ cups granulated sugar
  • ½ cup vegetable oil
  • 2 cups shredded zucchini
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a 9×13” baking pan by lining it with foil and spraying it with cooking spray.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a large bowl, mix vegetable oil, sugar, and vanilla extract until well combined using an electric mixer.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Fold in shredded zucchini.
  5. If the batter seems dry, add water one tablespoon at a time until a thick consistency is achieved.
  6. Spread the batter evenly in the prepared pan and bake for 25–30 minutes or until set.
  7. Allow cooling and then frost if desired.
