  • 2 Zucchini, grated
  • 1 Carrot, grated
  • 2 tablespoons Olive Oil
  • 1 Brown Onion, diced
  • 2 Turkey Bacon Slices, diced
  • 5 Eggs, lightly whisked
  • 1 cup Self-Raising Flour
  • 1¼ cup Grated Cheddar Cheese
  • Salt and Pepper to taste

Instructions

  1. Preheat your oven to 180C (350F) and line a square baking dish with baking paper.
  2. Grate zucchini and carrot into a colander, sprinkle with salt, and let sit for about 10 minutes to draw out moisture.
  3. In a frying pan over medium heat, cook diced onion and turkey bacon in olive oil until golden brown.
  4. Squeeze excess moisture from the zucchini and carrot mixture. In a large bowl, combine drained vegetables with onion, turkey bacon, cheese, flour, eggs, milk, olive oil, salt, and pepper. Mix well.
  5. Pour the mixture into the prepared baking dish and smooth the top. Bake for 35–40 minutes until firm to touch. Let cool before cutting into squares.
