- 200g udon noodles
- 100g shrimp
- 1 garlic clove (minced)
- 1 yellow onion (sliced)
- 120g white mushrooms (sliced)
- 1 carrot (cut matchstick-style)
- 2 tbsp neutral oil
- 1 tbsp regular soy sauce
- pinch salt and pepper
- 1 tsp rice vinegar
- 1 tsp brown sugar
- 1/3 tsp freshly crushed black pepper
- 2 tsp toasted sesame oil
- Boil the udon noodles according to package instructions. Drain and rinse with cold water.
- Heat 1 tbsp of oil in a pan over medium heat. Sauté minced garlic for 1 minute, then add mushrooms, onions, and carrots. Stir-fry until tender.
- In the same pan, add another 2 tbsp oil over medium-high heat. Cook shrimp until pink and opaque.
- Add boiled udon noodles to the shrimp and stir-fry on high heat.
- Pour in the sauce mixture; stir to coat evenly.
- Fold in cooked vegetables from step two.
- Serve garnished with sliced green parts of spring onion.
