  • 200g udon noodles
  • 100g shrimp
  • 1 garlic clove (minced)
  • 1 yellow onion (sliced)
  • 120g white mushrooms (sliced)
  • 1 carrot (cut matchstick-style)
  • 2 tbsp neutral oil
  • 1 tbsp regular soy sauce
  • pinch salt and pepper
  • 1 tsp rice vinegar
  • 1 tsp brown sugar
  • 1/3 tsp freshly crushed black pepper
  • 2 tsp toasted sesame oil

Instructions

  1. Boil the udon noodles according to package instructions. Drain and rinse with cold water.
  2. Heat 1 tbsp of oil in a pan over medium heat. Sauté minced garlic for 1 minute, then add mushrooms, onions, and carrots. Stir-fry until tender.
  3. In the same pan, add another 2 tbsp oil over medium-high heat. Cook shrimp until pink and opaque.
  4. Add boiled udon noodles to the shrimp and stir-fry on high heat.
  5. Pour in the sauce mixture; stir to coat evenly.
  6. Fold in cooked vegetables from step two.
  7. Serve garnished with sliced green parts of spring onion.
