  • 1 vanilla bean (split)
  • 220g cake flour
  • 200g granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon fine sea salt
  • 1 teaspoon pure vanilla extract
  • 90g browned butter
  • 1 tablespoon canola oil
  • 3 large eggs
  • 160g buttermilk
  • 200g remaining brown butter
  • 113g cream cheese (or 60g sour cream)
  • 2 teaspoons pure vanilla extract
  • ½ teaspoon fine sea salt
  • 360g powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a saucepan over medium heat, melt the unsalted butter. Continue cooking until it turns golden brown and has a nutty aroma. Remove from heat and let cool slightly.
  3. In a mixing bowl, combine the cake flour, baking powder, and fine sea salt. Whisk together until well mixed.
  4. In your stand mixer bowl, add the browned butter along with granulated sugar. Beat on medium speed until light and fluffy for about 3–5 minutes.
  5. Add eggs one at a time, mixing well after each addition. Then incorporate both pure vanilla extracts into the mixture.
  6. Gradually add the dry ingredient mixture to your wet mixture while alternating with buttermilk, beginning and ending with dry ingredients. Mix until just combined; do not overmix.
  7. Spoon batter into lined cupcake trays filling them about two-thirds full. Bake for approximately 18–20 minutes or until a toothpick inserted comes out clean. Allow cooling completely before frosting.
  8. In another bowl, beat together cream cheese and remaining browned butter until smooth. Gradually add powdered sugar and mix until fluffy. Use immediately for icing your cooled cupcakes.
