  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 23 teaspoons freeze-dried raspberry powder or pink food coloring
  • ½ cup heavy cream
  • ¾ cup dark or white chocolate chips, finely chopped
  • 1 tablespoon butter (optional)
  • Freeze-dried raspberries
  • Chocolate squares
  • Heart sprinkles
  • Melted white chocolate for drizzling

Instructions

  1. Prepare each dough flavor separately. Cream together the softened butter and sugars until light and fluffy. Add in the egg and vanilla extract, mixing until well combined. Gradually stir in the dry ingredients until just incorporated.
  2. Chill both doughs in the refrigerator for about 30 minutes. This step helps firm up the dough, making it easier to scoop.
  3. Scoop the chilled dough into balls using a cookie scoop or tablespoon. Press a small well in the center of each ball. Bake at 350°F (175°C) for 10–12 minutes. Once baked, re-press the centers while still warm to create space for the ganache filling.
  4. Allow the cookies to cool completely on a wire rack before filling them with ganache.
  5. To prepare the ganache, heat heavy cream until steaming but not boiling. Pour it over finely chopped chocolate chips and let it sit for a minute before stirring until smooth.
  6. Once cooled, fill each cookie center with ganache using a spoon or piping bag. Decorate with toppings as desired, such as freeze-dried raspberries or heart sprinkles.
