  • 8 cups chopped lettuce
  • 1 cup diced cucumber
  • 1 cup halved cherry tomatoes
  • ½ cup corn
  • 2 finely chopped spring onions
  • 1 avocado
  • 14 ounces firm or extra-firm tofu
  • 4 tablespoons cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 1½ tablespoons extra virgin olive oil
  • ⅓ cup tahini
  • ⅓ cup water
  • 2 tablespoons lemon juice
  • 1 clove garlic (minced)
  • ¼ teaspoon salt

Instructions

  1. Drain the tofu and press it between paper towels to remove excess moisture; then cut into cubes.
  2. In a bowl, mix cornstarch, garlic powder, paprika, salt, and black pepper. Toss the tofu cubes in this mixture until well coated.
  3. Heat olive oil in a frying pan over medium heat. Add the coated tofu and cook for 10-12 minutes until golden brown.
  4. In a large mixing bowl, combine lettuce, cucumber, tomatoes, corn, spring onions, avocado, and the cooked tofu.
  5. For the dressing, whisk together olive oil, tahini, water, lemon juice, minced garlic, and salt until smooth; drizzle over the salad before serving.
