  • 1/4 cup granulated sugar

  • 1 tablespoon water

  1. Prepare your baking sheet by lining it with parchment paper or a Silpat mat.
  2. In a medium-small saucepan, combine walnuts, brown sugar, granulated sugar, corn syrup, and water. Stir gently until mixed. Add butter.
  3. Cook over medium heat while monitoring the temperature with a candy thermometer until it reaches 295°F.
  4. Remove from heat and stir in vanilla extract. Quickly spread the mixture onto the lined baking sheet using two forks to separate clumps.
