  • 1/4 cup granulated sugar
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 1 pineapple, chopped
  • 2 cups purple grapes, halved
  • 2 cups green grapes, halved
  • 1 pound strawberries, hulled and quartered
  • 5 kiwis, peeled and quartered
  • 2 large mangos, chopped
  • 10 ounces blueberries
  • 6 ounces raspberries (optional)
  • 2 cans mandarin oranges, drained
  • Fresh mint for garnish (optional)

Instructions

  1. In a large mixing bowl, combine apricot preserves and sugar. Add lemon zest and juice; stir until well blended.
  2. Chop pineapple into small pieces and add to the bowl.
  3. Halve purple and green grapes; hull strawberries and quarter them before adding to the mix.
  4. Peel kiwis; chop as directed and add to the bowl.
  5. Prepare mangos by slicing around the pit; score the flesh before popping it out and chopping into pieces.
  6. Gently fold in blueberries and optional raspberries; then add drained mandarin oranges.
  7. Serve immediately with fresh mint garnish if desired.
