  • 24 oz mushrooms (sliced)
  • 1 carrot (grated)
  • 1 onion (diced)
  • 8 oz cream cheese
  • 1/4 cup sour cream
  • 1 cup heavy cream
  • 1 tbsp salt
  • 1/2 tsp black pepper
  • 1 tbsp Mrs. Dash
  • 1 tbsp chicken bouillon powder
  • 1 mushroom bouillon cube
  • 3 tbsp fresh dill for garnish

Instructions

  1. In a large pot, bring 12 cups of water to a boil. Add the cubed potatoes along with chicken and mushroom bouillon cubes. Simmer until tender, about 25 minutes; season halfway through.
  2. Heat oil in a skillet over medium heat. Sauté sliced mushrooms, diced onion, and grated carrot until mushrooms reduce in size, around 10 minutes. Stir in cream cheese and sour cream until melted.
  3. Combine sautéed vegetables with simmering potatoes in the pot and bring to a gentle simmer.
