  • 1 tsp grated ginger
  • 4 cups chicken broth
  • 1 can (14 oz/400 ml) unsweetened coconut milk (full fat)
  • 1 tbsp low sodium soy sauce
  • 1 tbsp fish sauce
  • 1 tsp toasted sesame oil
  • 3 tbsp Thai red curry paste
  • 1 tsp brown sugar
  • 2 tbsp lime juice
  • Chopped chives (for serving)
  • Your favorite vegetables (optional, for serving)

Instructions

  1. Prepare ingredients: Grate garlic and ginger; boil salted water in a large saucepan.
  2. Make soup base: In a large pot, heat vegetable oil over medium heat, sautéing garlic and ginger until fragrant. Add chicken broth and coconut milk, stirring in soy sauce, fish sauce, sesame oil, brown sugar, curry paste, and lime juice. Bring to a boil then simmer for 5 minutes.
  3. Cook gyozas: Boil gyozas according to package instructions (about 2-3 minutes), then drain.
  4. Serve: Divide gyozas into bowls and ladle hot soup over them. Garnish with chives or preferred toppings.
