  • 1/4 cup ice water (more as needed)
  • 1/4 cup lemon juice (cold)
  • 1 lb sweet potatoes
  • 5 tablespoons unsalted butter (softened to room temperature)
  • 1 cup dark brown sugar (packed)
  • 3 large eggs
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • 1 teaspoon salt
  • 1 1/4 cup evaporated milk
  • 1 tablespoon vanilla extract
  • Whipped cream for serving

Instructions

  1. Prepare the Pie Crust: Combine flour, salt, and sugar in a bowl. Cut in cold butter until crumbly. Mix in ice water and lemon juice until dough forms. Chill for at least 30 minutes.
  2. Cook Sweet Potatoes: Peel and chop sweet potatoes; boil until tender. Drain and mash.
  3. Make Filling: Mix mashed sweet potatoes with softened butter, brown sugar, eggs, spices, salt, evaporated milk, and vanilla until smooth.
  4. Assemble Pie: Preheat oven to 350°F (175°C). Roll out crust for pie dish and pour filling inside.
  5. Bake: Bake for about 90 minutes or until set and lightly browned.
  6. Cool & Serve: Let cool before serving with whipped cream.
