  • 1/4 cup granulated sugar

  • 12 tablespoons unsalted butter (melted)
  • 2 cups fresh sweet potato puree
  • 1/4 cup granulated sugar
  • 3 large eggs
  • 1 1/2 cups whole milk
  • 1/2 cup heavy cream
  • 1 teaspoon fine sea salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 2 large egg whites
  • 1/4 teaspoon cream of tartar
  • 3/4 cup granulated sugar
  • 1/4 cup water
  • 1/4 teaspoon fine sea salt
  • 1 1/2 teaspoons vanilla extract
  • Vegan marshmallows (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). In a food processor, pulse graham crackers until finely crushed. Combine with sugar and salt in a bowl, then mix in melted butter. Press into a greased 9×13 inch baking pan and bake for 10 minutes.
  2. In another bowl, whisk together sweet potato puree, sugar, eggs, milk, cream, salt, and spices until smooth. Pour over the pre-baked crust.
  3. Bake for 45–50 minutes until set. Meanwhile, prepare the topping by beating egg whites until soft peaks form; gradually add sugar until stiff peaks form.
  4. Heat corn syrup and water in a saucepan; drizzle into egg whites while mixing continuously. Fold in vanilla.
  5. Spread topping over the baked filling and return to the oven for an additional 10–15 minutes or until lightly golden.
  6. Allow to cool completely before cutting into bars.
