  • 1 cup mashed fresh strawberries (or strawberry puree)
  • 1 cup sour cream
  • 1 box white cake mix (15.25 oz)
  • 8 oz cream cheese, softened
  • 1 cup unsalted butter, softened
  • 23 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 1 cup heavy whipping cream (cold)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour three round cake pans.
  2. In a large bowl, combine the cake mix and mashed strawberries. Add eggs, milk, oil, sour cream, and vanilla; beat until smooth.
  3. Divide the batter among the prepared pans and bake for 22-28 minutes or until a toothpick comes out clean.
  4. Cool the cakes in their pans for about 10 minutes before transferring to wire racks to cool completely.
  5. For the frosting, beat together softened cream cheese and butter until fluffy. Gradually add powdered sugar and whip in cold heavy cream until peaks form.
  6. Level the cooled cakes and stack them with layers of frosting in between. Frost the top and sides of the cake.
