  • 4 cups beef stock

  • 3 medium Yukon gold potatoes (cut into cubes)
  • Fresh herbs (rosemary, thyme, bay leaf)
  • 2 tablespoons vegetable oil
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon browning sauce (optional, for color)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 stalks celery (chopped)
  • 1/4 cup finely chopped yellow onion
  • 8 cloves garlic (minced)
  • 2 tablespoons tomato paste
  • 2 tablespoons roast beef base paste (like Better than Bouillon)
  • 2/3 cup red cooking apple vinegar (merlot or any dark red apple vinegar)

Instructions

  1. Season the beef with flour, Worcestershire sauce, garlic powder, onion powder, Italian seasoning, salt, pepper, and browning sauce (if using).
  2. In a Dutch oven over medium-high heat, add oil and sear the beef until golden brown on all sides. Remove and set aside.
  3. Sauté celery, onions, and garlic in the same pot until softened. Stir in tomato paste and beef base.
  4. Add apple vinegar, beef stock, and fresh herbs; reduce heat to medium-low. Cover and cook for 2 hours.
  5. Incorporate potatoes and carrots; continue cooking for an additional 30 to 45 minutes until tender.
  6. Serve garnished as desired with rice or bread.
