Instructions

  1. Preheat your oven to 350°F and lightly butter an 11 x 8-inch glass casserole dish.
  2. Combine chopped dates and baking soda in a bowl. Scald milk in a saucepan and pour over the dates; let sit for 15 minutes.
  3. In one bowl, mix flour, baking powder, and salt. In another bowl, beat eggs. Use a food processor to blend eggs, dark brown sugar, butter, and vanilla. Gradually add dry ingredients followed by the soaked dates.
  4. Pour batter into the dish and bake for about 30 minutes until set.
  5. For the caramel sauce, melt butter in a saucepan, stir in brown sugar and salt until dissolved, then add cream and simmer until thickened.
  6. After baking, poke holes in the cake and pour some caramel sauce over it; let soak for 15 minutes before serving.
