  • 2 inches fresh ginger, minced
  • 2 serrano peppers, minced
  • 1 tsp ground cumin
  • 1 tsp cayenne pepper
  • ½ tsp ground coriander
  • 2 tsp curry powder
  • 1 tsp garam masala
  • 1 tsp ground turmeric
  • 1 tsp kosher salt
  • 1 tsp freshly cracked black pepper
  • 1 can full-fat coconut milk
  • 1 can crushed tomatoes
  • 1 tbsp lemon juice
  • ½ cup fresh cilantro, roughly chopped

Instructions

  1. Rinse lentils in cold water until clear; soak overnight if possible.
  2. In a large skillet, heat oil over medium-high and sauté garlic, ginger, and serrano peppers for about 3 minutes.
  3. Stir in spices and cook until fragrant (30–60 seconds).
  4. Add lentils, crushed tomatoes, and coconut milk; mix well.
  5. Reduce heat to low; cover partially and simmer for 20–25 minutes until lentils are soft.
  6. Stir in lemon juice and chopped cilantro before serving warm with rice or flatbread.
