  • 2 lbs lamb shoulder, cut into cubes
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 1-inch piece fresh ginger, grated
  • 2 tablespoons Madras curry powder
  • 1 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon tomato paste
  • 1 cup crushed tomatoes
  • 1 cup beef or lamb broth
  • 1/2 cup full-fat coconut milk
  • Salt and pepper to taste

Instructions

  1. Heat oil in a heavy-bottomed pot over medium heat. Sauté chopped onion until translucent (5-7 minutes).
  2. Stir in minced garlic and grated ginger; cook for another 2 minutes.
  3. Add spices (Madras curry powder, turmeric, cayenne pepper, cumin, paprika, cinnamon) and stir well for about a minute.
  4. Brown cubed lamb on all sides (8-10 minutes).
  5. Mix in tomato paste, crushed tomatoes, and broth; bring to a simmer then reduce heat to low.
  6. Cover and simmer gently for about 1.5 hours until the lamb is tender.
  7. Stir in coconut milk, season with salt and pepper, and serve hot.
