  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup heavy cream (Can substitute half with low-fat milk for a lighter version)
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup crumbled Turkey Bacon (Optional for added flavor)
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion until softened.
  2. Add minced garlic and diced jalapeños; cook for 2 minutes until fragrant.
  3. Add chicken breasts and chicken broth; bring to boil then simmer for 15 minutes until chicken is cooked.
  4. Shred the chicken using two forks and return it to the pot.
  5. Stir in heavy cream, cumin, paprika, salt, and pepper until well combined.
  6. Mix in softened cream cheese until melted; add shredded cheddar cheese.
  7. If desired, add crumbled turkey bacon for extra flavor and simmer for an additional 5 minutes.
  8. Serve hot garnished with fresh cilantro.
