  • Salt & pepper to taste
  • 1 cucumber, sliced
  • 6 cherry tomatoes, halved
  • 2 tbsp red onion, chopped
  • 1 tbsp chopped mint or parsley
  • Squeeze of lemon juice
  • 1 cup cooked white rice
  • 1 avocado, sliced
  • 1 tbsp spicy mayo (mayo + sriracha mix)
  • Optional: baby spinach or mixed greens

Instructions

  1. Heat olive oil in a non-stick skillet over medium heat.
  2. Toss cubed chicken with paprika, garlic powder, chili powder, salt, and pepper, then sear for 5-6 minutes until cooked through.
  3. In a mixing bowl, combine cucumber slices, halved cherry tomatoes, chopped red onion, herbs, lemon juice, salt, and pepper; toss well.
  4. Layer cooked rice in a bowl; add spinach or greens if desired.
