  • 500 g chicken breast, cut into bite-sized pieces
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 medium onion, sliced
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • ½ tsp crushed red chili flakes (adjust to taste)
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1 cup uncooked jasmine rice
  • 3 cups water
  • Pinch of salt

Instructions

  1. Rinse rice until water runs clear. Combine in a pot with water and salt; bring to boil. Reduce heat to low and cover for about 15 minutes until water is absorbed.
  2. In a wok or skillet over medium-high heat, add vegetable oil. Sauté garlic and ginger until fragrant (30 seconds).
  3. Add chicken; cook until golden brown on all sides. Stir in onions and bell peppers; cook until slightly softened.
  4. Pour in soy sauce, oyster sauce, sesame oil, and chili flakes. Thicken with cornstarch slurry if desired; stir well.
  5. Continue cooking for an additional 2-3 minutes until everything is well-coated in sauce. Serve hot over jasmine rice.
