  • 9 ounces Spanish chorizo, sliced
  • 1 green bell pepper, chopped
  • 1 yellow onion, finely chopped
  • 4 garlic cloves, minced
  • 1 carrot, chopped
  • 2 tbsp double concentrated tomato paste
  • 2 tbsp flour
  • 1.7 pounds waxy potatoes, cut into bite-sized pieces
  • 6 cups chicken broth
  • ¾ cup heavy cream
  • Spices: oregano, cumin, paprika, salt, black pepper, cayenne pepper

Instructions

  1. Prepare all ingredients by chopping vegetables and slicing chorizo.
  2. Heat olive oil in a large pot over medium-high heat. Add chorizo and cook until browned (about 3 minutes).
  3. Stir in the bell pepper; cook for an additional 2 minutes. Next, add onion, garlic, and carrot along with spices; continue to sauté for another 2 minutes.
  4. Mix in tomato paste and flour until fully combined. Add potatoes and chicken broth; bring to a boil.
  5. Reduce heat to medium-low and simmer covered for about 15 minutes or until potatoes are tender.
  6. Stir in heavy cream and garnish with chopped parsley; cook for another 3 minutes before serving.
