  • 1 ripe avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1 tsp sesame seeds

  • Salt & freshly ground black pepper, to taste
  • Optional: drizzle of extra virgin olive oil

Instructions

  1. Cook the eggs in boiling water for 7 minutes for jammy yolks or 9 minutes for fully set yolks. Cool them immediately in ice water, peel, and slice in half.
  2. Slice the avocado and place it on one side of a shallow bowl. Halve the cherry tomatoes and mix them with chopped herbs, salt, and pepper.
  3. Assemble by placing the soft-boiled eggs, avocado slices, and seasoned tomatoes in the bowl. Sprinkle sesame seeds on top and drizzle with olive oil if desired.
  4. Serve immediately for optimal freshness.
