  • 3 potatoes, diced
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp all-purpose flour (optional, for thickening)
  • 1 cup frozen peas (added at the end)

Instructions

  1. Begin by chopping all vegetables and chicken into bite-sized pieces.
  2. Add the chicken, carrots, potatoes, celery, onion, and garlic to the slow cooker.
  3. Sprinkle in dried thyme and rosemary along with salt and pepper; add tomato paste and chicken broth.
  4. Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender.
  5. If desired, thicken the stew with flour mixed with water during the last 30 minutes of cooking.
  6. Add frozen peas in the last 15 minutes of cooking.
  7. Remove bay leaf before serving hot.
