  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14 oz) diced tomatoes
  • 1 cup beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a Dutch oven, heat olive oil over medium-high heat. Sear the beef cubes until browned on all sides, about 5-7 minutes. Remove and set aside.
  3. In the same pot, sauté the onion, garlic, carrots, and celery until softened (about 4-5 minutes).
  4. Return the beef to the pot and add diced tomatoes (with juice), beef broth, tomato paste, rosemary, thyme, and oregano. Stir well.
  5. Cover the pot and bake in the preheated oven for 2-3 hours until the beef is tender.
