  • 1 small yellow onion, diced
  • 1 pound button mushrooms, cleaned

  • Olive oil and butter for sautéing

  • Vegetable broth
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil and half a tablespoon of butter in a large skillet over medium-high heat.
  2. Add zucchini slices, season with salt and pepper, and sauté until fork-tender (about 3-4 minutes). Remove from skillet.
  3. In the same skillet, melt remaining butter; add onions and cook until softened (about 2 minutes).
  4. Stir in mushrooms; cook until browned (5-7 minutes).

  6. Return zucchini to the skillet; mix well and heat through for another minute.
  7. Pour in vegetable broth; cook for an additional 2 minutes.
