  • 2 large eggplants
  • 1 lb ground beef (or ground lamb)
  • 2 cups crushed canned tomatoes
  • 1 white onion (diced)
  • 3 cloves garlic (minced)
  • 1 tbsp sumac
  • 1 tbsp Aleppo pepper
  • 2 tbsp olive oil
  • 1 tbsp salt (divided)
  • 1 tsp black pepper (divided)
  • 2 tsp ground coriander
  • 1 bay leaf
  • 2 tbsp Greek yogurt
  • 2 tbsp fresh dill (minced)
  • 1 lemon (juiced)
  • fresh mint (for garnish)

Instructions

  1. Preheat oven to 400°F.
  2. Slice eggplants, oil, season with salt and pepper, then roast for 30 minutes until soft.
  3. In a sauté pan, heat remaining oil over medium-high heat; add onions, garlic, spices, and sauté for 6-7 minutes.
  4. Add ground beef; brown for another 6-7 minutes.
  5. Combine the cooked onion mixture with crushed tomatoes and roasted eggplant; simmer for 20 minutes.
  6. For the yogurt sauce, mix Greek yogurt, minced garlic, dill, and lemon juice in a bowl.
  7. Serve moussaka hot topped with fresh mint and yogurt sauce.
