  • ½ cup light brown sugar
  • ¼ cup granulated sugar
  • ½ cup honey
  • 1 large egg
  • 1 tbsp vanilla extract
  • 1 tsp coarse sea salt
  • 1 tsp baking soda
  • 2½ cups all-purpose flour
  • 1 cup chopped roasted pistachios

Instructions

  1. Brown the butter in a saucepan over medium heat until golden brown. Let it cool for about 20–30 minutes.
  2. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  3. In a mixing bowl, whisk together browned butter, light brown sugar, granulated sugar, and honey until creamy. Add egg, vanilla extract, coarse sea salt, and baking soda; mix well.
  4. Gradually stir in all-purpose flour until combined. Fold in chopped pistachios.
  5. Using a cookie scoop or spoon, portion dough onto prepared baking sheet with space between each cookie.
  6. Bake for 8–10 minutes or until edges are lightly golden. Cool for 5 minutes before transferring to a wire rack.
