  • 150g salmon fillet
  • 1 cup uncooked brown rice
  • 2 eggs
  • Diced avocado
  • Salt and pepper to taste
  • Optional: 1 tsp balsamic glaze

Instructions

  1. Rinse brown rice under cold water until clear. Combine with water and a pinch of salt in a pot; boil then simmer for 25-30 minutes.
  2. Preheat oven to 180C (350F). Season salmon with salt and pepper; bake on a lined baking tray for 12-15 minutes until flaky.
  3. Boil water in a pot; gently lower in eggs and cook for 6-7 minutes. Transfer to an ice bath, cool, peel, and cut in half.
  4. In a bowl, layer cooked brown rice, pieces of salmon, diced avocado, and halved soft-boiled eggs. Drizzle with balsamic glaze if desired.
