  • 8 pineapple rings
  • 1 cup dark rum
  • 1 cup coconut rum
  • 1 ½ cups all-purpose flour
  • 1 (10 oz.) bag sweetened coconut flakes
  • 2 large eggs
  • ½ cup coconut milk
  • Vegetable oil (for frying)
  • 4 oz. cream cheese (for dipping sauce)
  • ½ cup powdered sugar (for dipping sauce)

Instructions

  1. Soak pineapple in dark rum and coconut rum for at least one hour. Drain and pat dry.
  2. Set up three bowls: one with flour, one with the whisked egg mixture (eggs and coconut milk), and the last with coconut flakes.
  3. Coat each pineapple ring first in flour, then in the egg mixture, and finally in coconut flakes.
  4. Heat vegetable oil in a deep pot to 350°F (175°C) and fry coated rings for about one minute per side until golden brown. Drain on paper towels.
  5. For the dipping sauce, mix softened cream cheese with powdered sugar and reserved rum until smooth.
