Instructions

  1. Preheat oven to 400°F (200°C).
  2. Rinse cherry tomatoes and pat dry; place in a large mixing bowl.
  3. Slice the top off the garlic head to expose cloves.
  4. Drizzle 2 tablespoons olive oil over tomatoes; season with salt, pepper, and red pepper flakes. Toss to coat.
  5. Line a baking sheet with parchment; spread seasoned tomatoes in a single layer and place garlic cut side up on the sheet. Drizzle with olive oil and sprinkle with salt.
  6. Roast for 25-30 minutes until tomatoes are blistered and garlic is soft.
  7. Boil salted water in a large pot; cook pasta according to package instructions until al dente.
  8. Let roasted ingredients cool slightly; squeeze garlic into a mixing bowl and add roasted tomatoes along with any juices from the baking sheet.
  9. Gently mash together; stir in remaining tablespoon of olive oil and season as needed.
