  • 9 Roma tomatoes
  • 1 cup fresh basil
  • 4 garlic cloves
  • 1 yellow onion
  • 3 tbsp extra virgin olive oil
  • 2 cups chicken stock
  • 2/3 cup heavy cream
  • Salt and pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice Roma tomatoes in half, place them on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for about 1 hour.
  3. In a large pot, heat olive oil or butter over medium heat. Sauté diced onions until softened (about 5 minutes).
  4. Add minced garlic, thyme, salt, and pepper; sauté until fragrant.
  5. Stir in crushed San Marzano tomatoes, fresh basil, and sugar; simmer for 10 minutes.
  6. Add chicken stock and roasted tomatoes; simmer for another 30 minutes.
  7. Purée the mixture until smooth using an immersion blender.
  8. Mix in heavy cream until fully combined.
