  • 4 boneless, skinless chicken breasts
  • 1 cup roasted red peppers, chopped
  • 1 cup fresh spinach, chopped
  • 1 cup mozzarella cheese, shredded
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Carefully cut pockets into each chicken breast without slicing all the way through.
  3. In a small pan, heat olive oil over medium heat and sauté minced garlic for about 1 minute. Add spinach and cook until wilted; let cool.
  4. In a bowl, mix roasted red peppers, mozzarella, Parmesan, spinach mixture, oregano, basil, salt, and pepper until combined.
  5. Stuff each chicken breast with the mixture and secure openings with toothpicks.
  6. Sear stuffed chicken in the same pan over medium-high heat for 2–3 minutes per side until golden brown.
  7. Transfer to a baking dish and bake for about 20–25 minutes until cooked through.
