  • 1 cup whole milk
  • 6 tablespoons butter
  • 2 cups granulated sugar (400 grams)
  • 2 cups cake flour (220 grams)
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 tablespoon vanilla extract
  • 2 teaspoons unflavored vegan gelatin powder
  • 10 ounces frozen raspberries (thawed)
  • 2 cups powdered sugar (250 grams)
  • 2 cups desiccated coconut

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a baking pan with parchment paper.
  2. In a bowl, beat the eggs until frothy. Gradually mix in the milk and melted butter.
  3. In another bowl, combine granulated sugar, cake flour, baking powder, and salt. Slowly add this mixture to the wet ingredients until smooth.
  4. Pour the batter into the prepared pan and bake for 30–40 minutes or until a toothpick comes out clean. Let it cool completely.
  5. For the raspberry glaze, heat thawed raspberries with water in a saucepan, mash if needed, strain out seeds, then return liquid to pan. Add sugar and vegan gelatin; stir until dissolved.
  6. Cut cooled sponge into squares, dip each into the raspberry glaze, then roll in desiccated coconut. Allow to set before serving.
