  • 1 cup fresh raspberries, finely chopped or minced
  • 1 cup powdered sugar
  • 1 tablespoon fresh lemon juice
  • Zest of 1 lemon
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a large bowl, mix the flour, sugar, yeast, and salt.
  2. In another bowl, whisk together lukewarm milk, melted butter, vegetable oil, and eggs.
  3. Gradually combine wet ingredients with dry ingredients until a soft dough forms.
  4. Knead the dough on a floured surface for 8–10 minutes until smooth.
  5. Let the dough rise in a greased bowl for about 1 hour until doubled in size.
  6. Prepare the filling by mixing sugar, cinnamon, and minced raspberries.
  7. Roll out the dough into a rectangle and spread the filling evenly before rolling into a log.
  8. Cut into 12 slices and place in a greased baking pan; let rise for an additional 30 minutes.
  9. Preheat oven to 375°F (190°C) and bake rolls for around 25 minutes until golden brown.
  10. While baking, prepare the lemon glaze by whisking together powdered sugar, lemon juice, zest, and vanilla extract.
