  • 6 oz white chocolate melting wafers
  • 3 oz heavy cream
  • 8 oz dark chocolate melting wafers
  • Extra freeze-dried raspberry for decoration

Instructions

  1. Grind freeze-dried raspberry in a food processor until powdered, then mix with white chocolate melting wafers in a bowl.
  2. Heat cream in a small saucepan until simmering, then pour over the raspberry-white chocolate mixture. Stir until fully combined.
  3. Chill the mixture for 45-60 minutes until firm enough to scoop. Portion into 13 equal pieces and roll into balls.
  4. Melt dark chocolate in a heatproof bowl over simmering water. Dip each truffle into melted dark chocolate, letting excess drip off.
  5. Decorate with crushed freeze-dried raspberries and chill on parchment-lined baking sheet for another 30-60 minutes.
