  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 tbsp chopped mango (optional)
  • 1 tbsp olive oil or sesame oil
  • 1 tbsp rice vinegar or lemon juice
  • Salt & black pepper to taste

Instructions

  1. 1. Grill or pan-sear the seasoned chicken breast over medium-high heat for 6-8 minutes per side until golden and fully cooked. Slice into bite-sized pieces.
  2. 2. In a mixing bowl, combine mixed greens, cucumber, bell peppers, tomatoes, and mango (if using). Drizzle with olive oil and vinegar; season with salt and pepper.
