  • 18 (6-inch) corn tortillas
  • 1 (28 oz) can green chile enchilada sauce
  • 1 (16 oz) package shredded Monterey Jack cheese
  • 1 (8 oz) container reduced-fat sour cream

Instructions

  1. Preheat oven to 350°F (175°C). Grease a medium-sized baking dish.
  2. Season chicken with garlic salt and bake in the prepared dish for 45 minutes until fully cooked.
  3. Shred the cooked chicken once cooled.
  4. Char tortilla halves over an open flame for about 1 minute until puffed.
  5. Pour enchilada sauce into the baking dish, layer with tortillas, half of the shredded chicken, a third of the cheese, half of the sour cream, and a third of the sauce. Repeat layers.
  6. Cover with foil and bake for another 45 minutes.
