  • 2 cups shredded carrots
  • 2 cloves garlic, minced
  • 2/3 cup all-purpose flour
  • 2 large eggs, lightly beaten
  • 1/3 cup sliced scallions
  • 2 tablespoons olive oil

  1. Drain shredded zucchini in a colander with salt for 10 minutes, squeezing out excess moisture.
  2. In a large bowl, mix drained zucchini, carrots, garlic, flour, eggs, scallions, salt (1/4 tsp), and pepper (1/8 tsp) until combined.
  3. Heat olive oil in a sauté pan over medium-high heat.
  4. Scoop mounds of the mixture into the pan and flatten slightly; cook for 2-3 minutes per side until golden brown.
  5. Transfer to paper towels to drain oil; season with salt while hot.
