  2. Place rice Chex in a large bowl and crush lightly, leaving some larger pieces intact.
  3. Mix the melted peanut butter mixture into the crushed cereal until well combined. Refrigerate for about 30 minutes to set.
  4. Melt semi-sweet chocolate chips using a double boiler or microwave until smooth.
  5. Roll chilled mixture into 1 ½ tbsp sized balls (about 18 truffles).
  6. Dip each ball into melted chocolate until fully coated, then place on parchment paper to harden in the refrigerator for about 15 minutes.
  7. Once hardened, roll each truffle in powdered sugar before serving.
