  • 12 slices Texas toast or alternative bread
  • 1/2 cup plant-based butter (room temperature)
  • 1/3 cup pumpkin puree (for whipped butter)
  • 3 tbsp maple syrup or honey
  • 1 tsp vanilla extract (for whipped butter)
  • 1/2 tsp cinnamon (for whipped butter)
  • 1/2 tsp pumpkin pie spice (for whipped butter)

Instructions

  1. Heat a non-stick skillet over medium heat and melt a small amount of butter.
  2. In a rectangular baking dish, whisk together eggs, milk, pumpkin puree, vanilla extract, cinnamon, and pumpkin pie spice until well combined.
  3. Dip each slice of bread into the mixture until fully coated and place on the hot skillet.
  4. Cook for about 2-3 minutes per side until golden brown. Repeat with remaining bread slices.
  5. For the whipped pumpkin butter, beat softened butter in a bowl until fluffy, then mix in pumpkin puree, maple syrup or honey, vanilla extract, cinnamon, and pumpkin pie spice.
