  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter (softened)
  • 3/4 cup light brown sugar
  • 1/2 cup creamy peanut butter
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 1 1/2 cups mashed banana (about 3 or 4 medium bananas)
  • Optional: Chopped nuts

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9" x 5" loaf pan.
  2. In a mixing bowl, whisk together flour, cinnamon, baking powder, baking soda, and salt; set aside.
  3. In another bowl, beat softened butter with brown sugar and peanut butter using an electric mixer until fluffy.
  4. Add eggs one at a time, mixing well after each addition; then mix in vanilla extract.
  5. Gradually add the dry mixture in three portions while alternating with sour cream until fully combined.
  6. Gently fold in mashed bananas and optional chopped nuts.
  7. Spread batter into the prepared pan and bake for about 50 to 55 minutes until golden brown; a toothpick inserted should come out clean.
  8. Allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
