  • 2 eggplants
  • 2 tablespoons olive oil
  • 1 lb ground lamb or beef
  • 1 large sweet onion, chopped
  • 3 cloves fresh garlic, minced
  • 1 can (14 oz) canned tomatoes
  • 1 cinnamon stick
  • Salt and pepper, to taste
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice eggplants into rounds, sprinkle with salt, let sit for 30 minutes to draw out moisture, rinse and pat dry.
  3. Sauté eggplant in olive oil until golden brown; set aside.
  4. In the same skillet, cook chopped onions until translucent, add minced garlic until fragrant.
  5. Add ground lamb or beef; cook until browned. Stir in canned tomatoes, salt, pepper, and cinnamon stick. Simmer for 15-20 minutes.
  6. Prepare béchamel by melting butter in a saucepan, whisking in flour, gradually adding milk until thickened; stir in Parmesan.
  7. Layer half of the eggplant in a baking dish, top with half of the meat sauce; repeat layers and pour béchamel on top.
  8. Bake covered for 30 minutes; uncover and bake for another 15-20 minutes until golden brown.
  9. Let rest for 15 minutes before serving.
