  • 1 cup panko bread crumbs
  • 1 medium yellow onion (diced)
  • 2 cloves garlic (minced)
  • 1 tablespoon butter
  • 1 large egg
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • 1/2 cup ketchup (for the topping)
  • 1 tablespoon brown sugar (for the topping)
  • 1 tablespoon spicy brown mustard (for the topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Soak panko bread crumbs in milk for about 10 minutes.
  3. In a sauté pan, melt butter over medium-high heat and cook diced onions until fragrant. Add minced garlic and cook for an additional few minutes.
  4. In a large bowl, combine ground beef, soaked bread crumbs, sautéed onions and garlic, Worcestershire sauce, egg, dried thyme, and kosher salt. Mix gently until just combined.
  5. Shape into a loaf on the prepared baking sheet and create a crisscross pattern on top.
  6. Bake uncovered for 40 minutes.
  7. Mix together ketchup, brown sugar, and mustard in a bowl; spread over meatloaf after initial baking time.
  8. Continue baking for another 30-35 minutes until internal temperature reaches 160°F (70°C).
