  • 1 1/4 cups caster sugar
  • 3 tsp baking powder
  • 1/2 tsp fine salt
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs
  • 1 1/2 cups whole milk
  • 1/2 cup vegetable oil
  • 2 tbsp Greek yogurt
  • 2 tbsp cocoa powder (for flavor)
  • 1 tsp strawberry essence

Instructions

  1. Preheat the oven to 350°F (175°C) and line cupcake tins with liners.
  2. In one bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, cream the butter with eggs, milk, oil, yogurt, and vanilla until smooth.
  3. Gradually combine dry ingredients with wet ingredients until just mixed.
  4. Divide batter into three bowls: add cocoa to one for chocolate; mix strawberry essence and food dye into another for strawberry; leave one plain for vanilla.
  5. Alternate scoops of each flavor into cupcake liners to create a marbled effect.
  6. Bake for 20–25 minutes or until a toothpick inserted comes out clean. Cool completely before frosting.
