  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/4 cup + 2 tbsp cocoa powder
  • 1 tsp baking soda
  • 1 large egg
  • 1/2 cup buttermilk
  • 1/2 cup vegetable oil
  • 3/4 tsp vanilla extract
  • 8 oz cream cheese (room temperature)
  • 8 oz Cool Whip (thawed)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round baking pan.
  2. In a mixing bowl, combine flour, sugar, cocoa powder, baking soda, and salt. Add egg, buttermilk, vegetable oil, and vanilla extract; mix until combined. Gradually stir in boiling water until smooth.
  3. Pour batter into the prepared pan and bake for 30–40 minutes or until a toothpick comes out clean. Let cool completely.
  4. For the strawberry layer, beat room temperature cream cheese with sugar; mix in milk and strawberry extract before folding in half of the Cool Whip.
  5. Cut the cooled cake horizontally into two layers. Spread the strawberry mixture on one layer and place the second layer on top.
  6. Repeat for the vanilla layer using vanilla bean paste instead of strawberry extract.
  7. Frost with remaining Cool Whip and decorate as desired.
