  • 1/2 cup walnuts (chopped)
  • 1 cup grated zucchini (wrung out)
  • 2 cups grated carrot
  • 1/2 cup unsweetened applesauce
  • 1/2 cup maple syrup
  • 3 large eggs
  • 1/2 cup avocado oil
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F and line muffin tins with paper liners.
  2. In a large bowl, whisk together sugar, flour, cinnamon, baking soda, salt, shredded coconut, and walnuts until blended.
  3. Stir in the grated zucchini and carrots until evenly distributed.
  4. In another bowl, mix applesauce, maple syrup, eggs, avocado oil, and vanilla extract until well combined.
  5. Pour the wet mixture into the dry ingredients' well and gently fold until just combined—avoid overmixing!
  6. Scoop batter into muffin tins and bake for 25-35 minutes until a toothpick inserted comes out with moist crumbs.
  7. Cool in the pan for about seven minutes before transferring to a cooling rack.
